Burger Buns



Preparation Time: 2 hours
Cooking Time: 20 minutes
Serves: 4 buns


·         250g strong white bread flour
·         10g instant yeast
·         10g sugar
·         5g salt
·         30g unsalted butter
·         140ml warm water
·         Optionally:
·         1 egg white
·         2 teaspoons of sesame seeds

Easy Pizza


What an easy recipe

300g White flour
7g yeast
200 ml warm water
1 tsp salt
1tbsp oil

Mix together ingredients
Split into two balls and let rise for a few mins
on a floured surface roll into a pizza shape
Add topping

cooks in about 10-15 mins at GM5 :)

Gluten and Lactose Free Soda Bread

Cooking time : 40 mins Prep time 20 mins.

Background
So this is the first time that i have tried to make a gluten free bread. So i thought i would try an easy one. The use of Bicarbonate of soda in this recipe means that its quick since it doesnt require any rising time, just mix and cook. 
Note: In this recipe i added Oats, however this is not necessary and simply requires less milk in the mix. 
Ingredients

500g Gluten Free Flour
2 tsp Xanthum Gum
2 tsp Baking powder
1 tsp salt
40 g butter (melted)
1tbsp Treakle or golden syrup
100g Oats*
250 ml Alpro Soya Dairy Free single cream
150ml Lactose Free Milk

*Oats do not actually contain gluten but a very similar protein called avenalin. Many individuals with coeliac condition may be able to tolerate oats whilst other individuals may need to avoid them. The majority of oat products are contaminated with wheat, rye or barley and therefore making them unsuitable for a coeliac diet. 


Note: Im still unsure about baking soda adn baking powder. I understand that to use baking soda you need an acid base such as buttermilk or lemon juice.
Optional 
3 tbsp seeds
1 cup of currents or raisins

Instructions
Mix all of the dry ingredients together
Add the melted butter, syrup, single cream  to the mix. Slowly add the milk until the mix resembles that desirable to make bread - a fairly dry mix.

Gluten and Lactose Free Brownie


Background

So this is a basic Brownie recipe that i made more based on what i had in the cupboard than anything else. I would say that this is easy to overcook so take it out as soon as the middle is just setting. Goes great with custard and reminds me of being a kid : )

Summary

Difficulty: Easy

Ingredients

90g Soya Butter
90g Lactose free Chocolate
90g Gluten Free Plain flower (sifted)
1tsp Xanthum Gum
2 Eggs
90g Brown Sugar

Instructions

  1. Turn the oven on to gas mark 4.
  2. Prepare a 20cm square tin and line with parchment.
  3. Melt butter and Chocolate together. Note the chocolate will take longer to melt than the butter.
  4. Whisk the eggs and sugar together until creamy (like milkshake).
  5. Fold the warm choc/butter mixture, flour, and Xanthum gum into the egg/sugar mixture.
  6. Pour mixture into cooking tin.
  7. Cook for 20-25 minutes.
  8. Enjoy :)

Gluten and Lactose Free Chicken and Rice (In one Pot)

Background

So I found this recipe on several food blogs, and it looked nice so thought that I would give it a go. This really does produce a large amount. It is fairly quick to cook once everything is prepared. Its filling and would say that is is more of a wintery dish. This is a easy dinner party kind of meal since its all made in advance and people can serve themselves. 

Ingredients



4 Chicken Thighs (With Bones) seasoned with salt and pepper.
Olive Oil
1 Onion
2 Garlic Cloves
4 Slices of Bacon – Cooked until crunchy and then cut into square centimetre pieces
1 tsp Cumin
1 tsp Turmeric (Or a pinch of Saffron if you have it)
1 tsp Paprica
1 Red Pepper
2 Cups of Gluten Free Chicken Stock
1 400ml can of Chopped Tomatoes
1 Cup of long grain rice
Salt and Pepper to season
1 Cup of Frozen Pees
1 tsp dried Parsley

Instructions

  1. Fry the bacon until crispy. Remove from pan and place on kitchen paper to dry. Once dry cut into centimetre square pieces.
  2. Brown off the chicken in the same pan. Start with the the skin side and rotate until you are sure that the chicken has cooked through and is browned on the skin. Remove from pan and place on kitchen paper.
  3. In your pot fry the peppers and onions until softened and browned. Once almost ready add the seasoning.
  4. To the pot add the can of chopped tomatoes, chicken stock, bacon pieces, chicken pieces, and rice.
  5. Bring to boil and then put on a medium to low heat. Stir occasionally to ensure that the rice does not stick to the bottom of the pot. Cook for about twenty five minutes or until correct consistency.

Gluten and Lactose Free Chicken Curry

Quick and Easy - An every day dinner recipe

Background:

So we found this recipe on the back of a packet of curry powder. Its effectively a tomato based chicken curry. It turned out to be really simple and quick to make. Be warned that when we made this it came out pretty hot.

Ingredients:

3 tbsp Oil
1 Onion (finely diced)
1 Pack of Mushrooms (Cut into quarters)
1 Pepper (fairly finely diced)
2 tbsp curry powder (to taste)
400g (1 tin) Chopped Tomatoes
450g Cubed Chicken (Uncooked)
150ml warm water
Dried rice (1/2 cup per person)
Small bunch of Coriander (finely diced)

Instructions:
  1. Heat the oil in a wok or big frying pan over a medium heat
  2. Fry the onions, mushrooms, and pepper until softened and browned. This should take about four or five minutes.
  3. Stir in the curry powder, and chicken until browned. This should take another few minutes.
  4. Add the tomatoes and extra water and simmer until it has reduced to a suitable consistency. This should take about fifteen minutes.
  5. A few minutes before the curry is ready mix in the diced coriander.
  6. Serve immediately over a bed of rice.

Gluten and Lactose Free Pork Stir Fry

Difficulty: Simple (2/10)
Cooks in 20 minutes

Background:

So this is a really nice and creamy rice dish. Sliced pork in a Paprika flavored cream. Nice and simple, just the way i like it :) This is so simple you might as make a double quantity and save for later.

Ingredients:

15ml (1tbsp) Olive Oil
1 Onion Thinly Sliced
1 Red Pepper thinly sliced
3 pork loin steaks cut into thin strips
5ml (1tsp) Paprika
250ml Soya Dairy Free Cream (Alternative to normal Single cream)
30ml (2 tbsp) Freshly Chopped Parsley
Dried white rice (1/2 Cup per person)


Instructions:
  1. Heat the oil in a medium heat wok or frying pan.
  2. Cook the onion and pepper for three to four minutes until browning.
  3. Add the sliced pork and Paprika. Fook for a further four minutes until the meat has browned.
  4. Stir in the single cream and season with pepper.
  5. Cook for an additional five minutes
  6. A few minutes before it is ready add the chopped Parsley.
  7. Serve on a bed of rice.

Gluten and Lactose Free Apple Cake

Difficulty: Easy/Moderate
Time: 30 mins

Background:

This is a really interesting surprisingly light apple cake, and really easy to make. It goes great served fresh and still hot and drenched in custard. A winter must. I dont know how long it stores for since it was all eaten within the day. I dont see any reason why you couldnt replace the apples with any other fruit. I might even try it again with summer fruits. 

Ingredients:

675g Golden Delicious Apples (But any will do) Peeled if preferred. These need to be cored and sliced.
1 lemon (Grated rind, and juice)
4 medium free range eggs
150g Caster Shugar
150g plain flour (gluten free plain sifted flower)
1 1/2 tsp Xanthum gum (not required if normal flower is used)
1 Pinch of salt
5ml (1 tsp) gluten free baking powder
115g Melted Soya Margarine (Plus extra for greasing)
1 1/2 tsp mixed spice
Vanilla icing sugar to sprinkle over the top
Lactose free Vanilla Custard (150ml per person)

Instructions:

  1. Preheat oven to 180'C/350'F/Gas Mark 4.
  2. Grease a 23cm baking tin, and line with grease proof paper.
  3. Cut the apples into segments/slices. (Like in a chocolate orange).
  4. Put apples in a bowl and cover with the lemon juice and lemon rinds. Make sure the apples are covered. This will shop them browning.
  5. Put the Eggs, Sugar in a bowl and whisk until mousse like.
  6. Sift the flower, xanthum gum, the baking powder, salt, mixed spice, over the egg mousse, and fold gently in with a large metal spoon. 
  7. Slowly drizzle in the soya margarine from the side of the bowl and gently fold in.
  8. Mix in the apples, lemon Juice, and Lemon Rind. 
  9. Spoon into the tin and level the surface.
  10. Bake for 40 minutes, until the cake browns on top and a skewer comes out clean.
  11. Remove from oven and leave to settle for ten minutes before turning on a cooking rack to cool.
  12. Serve hot. Decorate with icing sugar and a few lemon rinds.
